Healthy Eating: Buddha Bowls

I have been trying to make a few changes in my diet lately. I eat pretty well normally but I am always trying to find quick ways to eat healthy because I often don’t have hours to spend in the kitchen.

A couple weeks ago I cooked up a bunch of veggies and some grains, added some beans and had healthy meals for a few days.


This one contains roasted yellow sweet potatoes, roast beets, a super grain mix I got at Whole Foods that has quinoa, millet and buckwheat, roasted asparagus, roasted carrots, cooked red cabbage, and white beans.

I added a dressing to it and made enough to last for a few servings. Here’s the recipe I used. I can’t remember where I initially got it but, as usual, I modified.

¼ cup almond butter
Juice of 1 lemon
2 teaspoons tamari or soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons water

Delicious, easy and healthy! It doesn’t get any better!
